Turkey Crown - approx 4kg
Salted butter - 120g
Lard - 120g
Bacon
Butter
Thyme - 6 sprigs
Salt
Pepper
Remove the wish bone from the turkey.
Place the salted butter, lard and the thyme under the skin of the turkey and season.
In a hot pan gently seal off all the crown and then cover with sliced streaky bacon and tin foil and place in a roasting tray. Place a full cup of water in the base of the roasting tray and cook at 160°C for 20 minutes per kilogram. Cooktime depends on the weight of the bird plus an extra hour on top.
Approximately 40 minutes before your total time is up, remove the tin foil and bacon, then turn your oven up to 180°C for the remaining period of the time
To check your turkey is cooked, pierce the largest section of the turkey and check the juices run clear.
If this happens, turn the crown upside down and cover again with foil for 10 minutes – This will allow all the juices to follow back through the breast keeping your turkey crown succulent.
