The partnership between Paul and Daniel Gilmour of John Gilmour Butchers has been built around a shared passion for provenance, craftsmanship and creating memorable dining experiences.

For Paul, knowing where the ingredients on his menu come from is fundamental to the 1892 Grill concept.

“It is massively important. I pride myself on working with the very best suppliers in Scotland, therefore I’m able to tell our guests exactly where our produce comes from.”

This close relationship with suppliers allows the culinary team to understand the ingredients they are working with, while supporting a focus on sustainability and ethical practices.

Daniel Gilmour shares the same appreciation for Scotland’s landscape and its influence on the quality of the produce.

“The clean air, natural grazing land and slower farming approach all contribute to the flavour and texture of the meat,” explains Daniel. “The climate and terrain genuinely create a product that’s difficult to replicate anywhere else.”

It’s this sense of place that makes Scottish produce such an important part of the 1892 Grill experience.

“Whether it’s beef, lamb or game, Scottish produce delivers exceptional flavour, provenance and consistency,” he says. “It’s something we’re incredibly proud to champion.”

At 1892 Grill, this commitment to provenance is reflected throughout the menu, with every dish designed to showcase the quality of the ingredients.

The Story Behind the 1892 Grill Menu

Creating the new menu has been a collaborative process between the Fonab Castle culinary team and John Gilmour Butchers.

For Paul, working closely with suppliers is essential when developing new dishes.

“Their expert knowledge and enthusiasm for seasonal and peak products really allows me to put the very best ingredients in front of our guests.”

The collaboration goes beyond simply selecting cuts of meat. The teams have worked together on ageing profiles, cooking styles and bespoke preparations to ensure the menu complements the character of Fonab Castle.

John Gilmour Butchers’ team has also been strengthened by Matthew Budge, who brings experience from some of Scotland’s finest kitchens. His knowledge of both the kitchen and dining-room experience has complemented the collaboration between the butcher and Fonab Castle’s culinary team.

The result is a menu designed around quality, seasonality and the distinctive character of Scottish produce.

From Farm to Plate

The new 1892 Grill experience has also seen investment in specialist equipment, including a Josper grill and two meat-ageing fridges.

For Paul, these additions provide the culinary team with greater control over the preparation and ageing of the meat, helping to ensure every cut reaches the table in the best possible condition.

Daniel adds that guests can also expect selected cuts and bespoke preparations created specifically for Fonab Castle.

“We’ve worked closely with the culinary team to ensure the offering feels unique to the venue and gives guests something they won’t necessarily find elsewhere.”

One highlight to look out for is the Butcher’s Choice Board, created to showcase the quality and variety of the restaurant’s exceptional meat selection.
