Five-star Pitlochry hotel introduces new 1892 Grill
Fonab Castle, the highly-acclaimed five-star hotel in Pitlochry, has introduced its new restaurant concept, 1892 Grill.
The hotel, which is part of the Crerar Hotels Collection, has updated its restaurant and created new menus under the guidance of its Executive Head Chef Paul Tyrrell who returned to the hotel to lead the F&B last year after having previously worked at the hotel in 2016.
The restaurant, which has panoramic views of Loch Faskally and the surrounding mountains, has also made award-winning butcher, John Gilmour Butchers its official meat partner, supplying its exceptional cuts of meat including selected cuts and bespoke preparations created specifically for the 1892 Grill.
With seasonality at the forefront of the menu, John Gilmour Butchers will continue to look at opportunities to introduce limited-run cuts, rare breeds and special selections throughout the year, so guests are getting something truly exceptional and unique at Fonab Castle.
The hotel has invested in brand-new equipment to bring the concept to life, purchasing a Josper Grill from Spain as well as installing two meat aging fridges which will allow Paul and his team to carefully age the meats until they are in the very best condition, ready to be served to guests.
Executive Head Chef Paul said: “I pride myself on working with the very best suppliers in Scotland and being able to tell our guests exactly where our produce comes from whilst knowing that the upmost care has gone into the process.
