Bottle of wine – preferably a full bodied, plummy, red
Freshly squeezed juice of 3 oranges
30 g Light Muscovado sugar
1 cinnamon stick
3 Star Anise
Break up the star anise, then mix all spiced together in a large sauce pan and lightly toast for a few minutes warmed and aromatic. Add the sugar and a few sploshes of the wine until the sugar is dissolved and add the freshly squeezed orange juice. Cut one orange in to slices, half and add then cut one lemon into slices and add to your pot.
Gentle simmer for 20 minutes then strain, serve with slice of orange and lemon and a star anise. Add touch of honey to taste.
