To make your marshmallow: first mix sugar and glucose to make your sugar syrup then bring to the boil to 121°C. You then add the gelatine to syrup. In a mixer whisk egg whites until cloudy and slowly add sugar syrup. Keep mixing until the meringue is at a stiff peak. For your chocolate ganache; bring double cream to the boil and pour over the chocolate. Add your cream and chocolate, then whisk until fully combined.
To finish your snowballs, pipe your meringue into ball moulds and leave until gelatine sets. When your chocolate ganache has set to a glazing consistency glaze the meringue balls. Then all you have to do is roll your glazed meringue in desiccated coconut until fully covered. Your snowballs are now finished!
