King Edward, Yukon Gold, Shetland Black or Highland Burgundy Potatoes

Peel then halve or quarter your potatoes then boil with garlic, thyme and rosemary. Just before they come to the boil, season with flakes of sea salt.
Then take off the heat and roast for 50 minutes* in butter and duck fat with more garlic, thyme and rosemary at 170ºC - 180ºC until they are golden and crispy on the outside and soft and fluffy on the inside.
*Ovens vary, so keep an eye on your tatties and sample as you go!
